Hey guys and gals, I will be in the 320's by the end of this week. It has been 4 or 5 years since I have seen this number. With everyday workouts of 1 to 2 hours a day, a healthy diet, and not to forget a awesome sponsorship with Anytime Fitness in San Marcos. . . I can just see the pounds melt away. . . once and for all! It was real easy to get discouraged in the first week of working out because I gained 7 pounds, but after tweaking my diet to fit the workout, the weight has just been falling off!! I love to go grocery shopping now for foods that are healthy to eat, and the great thing about it is that it's cheaper to buy healthier foods. We spend an average of 40 to 100 dollars a week in eating out, but how awesome is it to put that money into your pocket and eat healthy! To show you that it can be done, I have included one my newest recipes to get things started for you. I'm sure your mouth will be watering when you hear what I made. . . so here it is. . .
Erik Chase's Crazy Make You Wanna Cry Cause It's So Good Italian Chicken
4-6 small chicken breasts
1 green bell pepper
1 large sweet white onion
1 garlic bundle (about 9-12 cloves, I know cause I cut it myself)
1 large red tomato
1/3 cup Italian bread crumbs
2 cups low-fat mozzarella cheese
1 tsp of seasoning salt for chicken
1 tsp of italian spices/seasoning for chicken
It's As easy as 1-2-3
1)Cook 4-6 chicken breasts until thouroughly cooked all the way through, you'll know when inside is as white as the outside. Then slice chicken into cubes and put them back on the grill at a low heat setting.
2)Add 1 tsp of seasoning salt and italian spices evenly on all sides of chicken breasts
3)Chop onion, tomato, bell pepper, and garlic. Then add vegetables to
chicken in order to sautee vegetables and blend in the natural flavors in with the chicken breasts.
4)Add 1/3 cup italian breads crumbs to mixture and stir in all ingredients.
5) Lastly, top it off with low fat mozzarella cheese and ENJOY!!!
This whole meal will cost you about $10.00 and it will feed 4-6 people!!
